Explore the magic of a local cacao farm, where you will learn about the process of turning cacao into delicious, rich chocolate. Dive deeper into the natural world with a guided medicinal and edible plant walk, discovering the rich abundance of healing and nourishing plants that thrive around us. This holistic experience connects you to the roots of food, fostering a deeper appreciation for nature's bounty and it's role in creating vibrant, plant-based cuisine.






Plant-Based Culinary Arts Program
Our comprehensive 2-month Plant-Based Culinary Arts Program is designed to transform your approach to cooking by focusing on both nutrition and taste. This hands-on program covers the essentials you need to master plant-based cuisine.
You’ll start with the fundamentals, including kitchen hygiene, choosing the right equipment, stocking a plant-powered kitchen, cooking methods and mise en place. We will learn to cook beans, grains, and flavourful stocks, a fundamental component of most plant-based diets.
We will experiment with herbs, spices and international flavours. From there, we dive into the exciting world of seaweeds, superfoods, and mushrooms, and wild edible and medicinal plants teaching you how to incorporate these nutrient-dense ingredients into everyday meals.
You’ll also learn the art of sprouting, dehydrating, and fermenting foods such as kombucha, sauerkraut, tempeh, and other staples of plant-based cuisine. We will dabble into the world of raw cuisine and learn the benefits of nutrient-dense, unadulterated gifts from the earth.
The curriculum also includes infusions, dressings and sauces, allowing you to transform ordinary meals into something extraordinary. Explore healthy desserts that satisfy without compromise, and discover the science of plating principles, along with advanced techniques like tuiles, spherification and jellies for creating stunning dishes. We will visit a local cacao farm and learn to make our own mineral-rich, and soul-soothing chocolate.
Throughout the course, we emphasize not only the importance of nutrition but also how to make each dish flavourful and satisfying. By the end, you’ll have a well-rounded skill set and the confidence to create delicious, nourishing meals for yourself, your loved ones, or even in a professional setting.
To celebrate your accomplishments we will host a dinner party for some special friends where we can show off our individually designed and created menus from canapé to main to dessert.
